Hi all, I just wanted to bring up the topic of verjuice :) Have many of you cooked with it? I personally love verjuice and have been cooking with it for many years and think it needs to start getting more main stream exposure, as it is such a great ingredient. It has actually been used for cooking in Britain since the middle ages! I have used verjuice in marinades not only on meat but with fruit, cucumber and also in marinating tomatoes. As well as deglazing meat dishes or veggies; it can be used to leave a sticky and sweet reduction in a pan or in creating the flavours for a stew, casserole or sauce. For a lovely sweet desert I even mix verjuice with fruit in cocktails, jellies and sorbets. In order to help with this new revival, I have been writing a new verjuice cookbook. I would love to hear what all your thoughts are on verjuice and if you have used it before. Hello everyone. Recently someone asked if it is possible to make gluten free panko using bread. I said yes and I think I was the only one who thought this. I have just written a blog entry on how to achieve light and flaky panko using two different types of gluten free bread.
