Question: (4 answers)

I mixed up a cookie recipe yesterday then decided I would make bars instead of individual cookies. I mixed up the dough and refrigerated for an hour before baking. I lined a 7x11 non-stick pan with parchment paper, buttered the top of the parchment, then pressed the cookie dough into the pan. I preheated the oven to 350, but was afraid they may cook too quickly on the edges and the middle not get done, so I reduced the heat to 325 before putting into the oven. I didn't really know how long to bake so I looked up a few other recipes and for 9x13 pans the recipes I looked at said 30-45 minutes @ 350. I figured since my pan was smaller and I reduced heat it would need a longer bake time, but I went ahead and set my timer for 20-30 minutes (I cannot remember which it was). My timer went off and I checked them and they were done (toothpick clean). It was only my second time using parchment paper, which lifted out beautifully and the edges of the bars were a nice light brown color, almost perfect. Today they are really dry and crumbly, is that normal for a cookie bar? I've never eaten or made them. It seems as if they were over baked, but they are so light in color and look perfect. I'll post the recipe & directions inside. Any suggestions on what may of went wrong?

Question: (1 answer)

Hi everyone, I had a note from the person who sells my cookies that they needed some more so I made a new recipe that a friend will take over for me tomorrow. She will also take some of my cookies in the freezer to keep them stocked. I call these cookies my Grandstand Cookies that have chocolate chips, peanuts and raisins in them with some quick oats.

Question: (4 answers)

When baking, should I always sift the flour even when the recipe doesn't call for it? I usually don't sift the flour, but the other day when a recipe specifically said to sift, I did and found it made a huge difference in the volume of the flour used. It made me wonder if I should always sift the flour even when a recipe doesn't say so?? Or does it matter more whether it's to bake bread, cookies or cakes? Thx!!

Question: (1 answer)

Hi Y'all! I saw a cookie bar recipe and the directions stated: butter the pan, put parchment paper down, butter parchment paper ........ Why do you need to butter the pan before adding parchment paper? Why does the parchment paper need to be buttered, for flavor? I thought it was a non-stick surface?
