Is it possible to knead more flour into bread dough after it has risen? I put it on the 'dough' cycle in the bread machine and after about an hour rising it is way too soft.

Yes, knead in more flour and let rise again.

I would sprinkle your surface with flour - and then dump the dough onto it - then sprinkle the top of the dough with flour. You can start there adding more flour a little at a time. I use a fine meshed sieve for the sprinkling part - it leaves a nice thin coat of flour.

How soft is your dough? Sometimes a really soft dough will produce oned of the best breads. It usually means that you will get those big holes in the finished product and a crusty crust.
This recipe has more than a 50% ratio of water to flour and is very good.
