My Mother-in-law made a delicious coconut cream pie that I have tried for years to duplicate. She would not give me her recipe! She said it was the recipe out of the red checkered Better Homes & Garden cookbook. But it did not work for me at all. The cream filling was so light and airy - I can't figure out how she made that part. Do any of you out there know what I'm talking about? Can you share your secret? I would love to make this light and airy coconut cream pie for my husband!

Is that the recipe? ^ in the link above. Perhaps she folded in some whipped cream to get it light and airy.

Beat egg whites until light and fluffy and fold into your hot pudding. It cooks the whites and gives the pudding a light texture.

That should be stiff peaks on the egg whites! My head must be a bit light and fluffy. ;(

I have several copies of this cook book. Make sure when you beat the eggs they should form stiff peaks when you move your blender out of the mix. They should be almost the consistency of whipped topping.

A girlfriend tried the stiff beaten egg whites added to the filling and it failed miserably! It made the filling runny. So I haven't tried that.
