I see many of the bread recipes call for a bread machine. I have no room for another small appliance. Is there a way to adapt a bread machine recipe to a stand mixer with a dough hook?

I would think so. Just look up some other recipes that use the mixer and adapt, combining ingredients and then "kneading" for the same time period as that other recipe states. I do this all the time, but the other way around. I let the bread machine do the mixing and kneading for me. But then I take the dough out and let it rise the second time in the loaf pan and then bake it.

That is a great question! I had just resigned myself to not being able to make any until I decided to get one. But if there is a way to make bread without the machine, I am all for that. Hope someone has worked it out and can tell us both how to do it.

A bread machine is simply an automated way to make bread. There is no difference in the ingredients whether you: 1) make by hand, 2) use a bread machine or 3) use a good stand mixer (like a KA). There is no change to the ingredients or ratios. Bread machine often specify a certain order of ingredients but that too only matters if using the delay cycle. Yeast should not come in contact with wet ingredients and sit for hours during delay. Similarly, that is also why bread machine recipes often call for powdered milk. None of that matter unless you use the delay cycle.

This is the bread I make with my kitchen aid. Rapid Mix Cool Rise White Bread. 6-7 cups all purpose flour 2tbsp.white sugar 3and1/2tsp.salt 3 packages active dry yeast 1/4cup butter or margarine softened 2 cups very warm water(120F-130F). Place 5and 1/2 cups flour,the sugar,salt and yeast and butter into the mixer bowl.Attach bowl and dough hook to mixer.Turn to speed 2 and mix for about 20 seconds.Gradually add warm water and mix about 1and 1/2 minutes longer.Continuing on speed 2,add remaining flour,1/2 cup at a time,and mix until dough clings to hook and cleans the sides of the bowl,about 2 minutes longer.Cover dough with plastic wrap and a towel let rest 20 minutes.( I put mine in the oven with the light on to rise. Divide dough in half.Shape each half into a loaf,Place in greased 8 and 1/2x2 and 1/2 inch loaf pans. Brush each loaf with oil and cover loosely with plastic wrap.Put in fridge for 2-12 hours. When ready to bake uncover dough,let stand at room temperature 10 minutes.Puncture any gas bubbles which may have formed.Bake in preheated 400F oven for 35-40 minutes. Remove from pans immediately and cool on wire racks. This is in the little book I got with my kitchen aid.I don't put the bread in the fridge. I let it rise the second time for about 45 min-1 hour.I also use half whole wheat flour. I have made this with grain flour and it was good. Hope this helps.

Bread recipes tend to be very forgiving and you can easily modify them with practice (i.e. more/less eggs or butter). I proof yeast, sugar, water and about 1/3C flour before staring. Let that sit for 1-2 hrs and then combine with the other ingredients. Bread machines typically don't do as good of a job of kneading the dough with those tiny/twirling blades. I think my KA is the best way to make bread dough. Let rise until double in size (time will vary based on what temp your house is....bread rises slower in the winter time). Punch down, form into rolls or loaves. Let rise second time then bake.
