Need extra recipes for pigs tail.. found here in Belize and it is heavily brined. So far best is to boil 3 times -rinse well and saute over med heat in fry pan. drain all oil as it is produced. . use imagination as to spices or sauces to use. do you have other methods to share please?

Dunno about brined, but I always just oven roasted these until fairly crispy, and enjoyed from there! Garlic and onion powder for seasoning, if you have them split, then a good soaking in lemon or lime juice with a bit of soya sauce, just to tenderise...
