What is 'Processed Cheese Food'? It is an ingredient listed in the recipe for 'Old Fashioned Mac and Cheese'. Is there an alternate choice for this?

Just make home made cheese sauce with your favorite cheese(s). Cold milk, corn starch type or Italian butter & flour browned then slowly add milk or cream then slowly add cheese(s). wisk either entire time. thin with milk & whisk until it is just right. Season with favorite spices and/or herbs.

I assume you are not from the US. Processed cheese is fake cheese made from oil. It's an American thing. You might prefer true old fashioned authentic cheese sauce.

cheddar would be a good cheese for the sauce if you want an American taste.

I agree - Velveeta or Cheez Whiz would work, or I'd even use cheap American slices.

Recipes on AR don't use brand names, so sometimes you get unusual sounding ingredients. Instead of says "Ritz crackers", they will say "buttery round crackers"....LOL. Either velveeta ro Cheez Whiz is what they are referring to.
