I really need a chocolate filling for some macarons, but it can't have eggs or chocolate in it, I have cocoa powder. Please help! I need to make this by tomorrow!!!

Cocoa powder IS chocolate.

Try CAROB... Its the best alternative to chocolate(cocoa). you can actually by carob powder at trader joes or specialty markets. hope that helps. oh yeah... egg beaters for egg sub

I was under the impression that Dessert girl can use chocolate since that is what cocoa is, unprocessed chocolate, but that she didn't have any chocolate on hand. I don't think it has to do with allergies. Although carob is fabulous even if you don't have allergies. As for a filling - a simple white icing recipe [made with shortening or butter and powdered sugar - beat with a mixer] will do, just substitute some of the powdered sugar with the cocoa and whip it until it is a fluffy enough consistency to fill a macarons. You could even kick it up a bit with some peppermint extract or orange. Hope that helps - as that is what I always do. If you need a fluffier consistency you may have to add a few drops of water - but you will have to whip it for a long time. Have patience. Good luck.
