i was just wondering as i just finished mixing the batter of banana muffins, the recipe calls for 1 beaten egg does it matter whether you beat the egg or not because sometimes i do and sometimes i don't? its just one of those things i wonder about! Thanks to you all!

If you are beating the egg with the sugar and fats it does not matter. Where it matters is if you are adding the egg to dry ingredients. You do not want to develop the gluten in flour, which will make it tough, by over-mixing. You would want to beat the egg first before adding it to dry ingredients.

Thanks Marie for the education of the egg, i did mix it in with the sugar, oil and banana. i guess i get lazy and just throw it in but i will look at it different now! I had a very close friend with the same name as yours, i used to call her sweet Marie, as she truly was a sweetie.

If you beat the egg before adding to a recipe, it tends to be easier to incorporate. I don't think it makes much difference otherwise.
