I tried making old fashion popcorn balls this morning. Followed the recipe to the letter. Cooked the syrup to hard ball stage (250) mixed it into the popcorn and it wouldn't stick together. It tastes amazing like popcorn balls should just won't stick together in balls should...so now I have a pan full of yummy gooey popcorn. What might I have done wrong?

Cooked sugar recipes are very fussy and even when cooked to a specific temp may not always behave the same way. Humidity can also be a factor. Did you use a calibrated thermometer? Putting blobs of hot sugar in water was never precies enough for me for these types of recipes.

This is why I am afraid of trying this recipe. I used to cook it years ago but after a few "bad days", I haven't done it for some time. don't get discouraged like I did, try , try again.

Make sure to use a proven recipe. This one says to cook to 255 degrees and the reviews also mention issues with humidity. ... http://www.foodnetwork.com/recipes/paula-deen/popcorn-balls-recipe/index.html ... This recipe says 250 but the reviews say the results were too sticky. ... http://www.foodnetwork.com/recipes/alton-brown/popcorn-balls-recipe/index.html
