my canning guide says not to add things like rice or pasta but doesn't say why.

I wonder Linda, if you under cook the rice would that work. huh.

Maybe it has to do with bloating, air pockets, liquid "disappearing". Any which way, I personally don't have room to even consider preserving things that don't need preserving (like rice). If I were one to make big batches of spanish rice I might can the "sauce" and use it later to make the rice.

I would think that the rice would turn out mushy. You would have consider the type of rice.

I'd expect mushy rice, too! It is so simple to make as needed, I'd just do it that way to ensure good results. If you really want to try canning it, I'd suggest you only do a jar or two to you can see it if works.

well- you can buy it it cans at the grocery- so it stands to reason you could do it- but i don't see why you would want to-??
