Good day to all. I have a difficult one here and am hoping I can get some ideas. I cook for an elderly couple who have some health issues and the wife with some firm likes and dislikes. She has a need for more calories but will not eat any pasta or red meat. She likes pork chops, pan fried only. Chicken she will eat but nothing heavy on the spices as it will hurt her stomach. Her husband on the other hand needs to watch his calories and loves red meat and not thrilled with chicken. I have been making red meat for him by simply giving him a plate of what I make here at home and then making his wife a chicken dish which she will eat a little of from time to time. This is ongoing with her and nothing to do with my cooking. Her husband loves everything I make so he is easy only I need to watch the calories with him and he has high blood pressure and is diabtec. I know they like my stuffed chicken and the pork chops I made the other day...other than that...I need some menue items. They liked the good for you greek salad which I added fresh spinach only next time I need to make her a potatoe to go with it. He mentioned he likes collard greens with back fat? I don't add meat to my collard greens when I make them and I figure back fat is pork? But what is it exactly. Thinking about making it for them for dinner next week. Any other menue items anyone can think of? Oh she only likes white rice with brown gravey so nothing with rice. Dumplings and chicken is a yes only I didn't get my dumplings rolled out thin enough for her so i will have to try that again later. Thank you!
