My question has to do with making Spatzle. Any recipe that I have seen except the one on this site tells you to let the batter cook (boil) until it floats to the surface. No matter what recipe I use the spatzle rises immediately to the surface Even the video with this site's recipe shows that. I cook it 5 minutes stirring it all the time but it is always floating on top of the boiling water. Has anyone ever made spatzle and had it rise to the surface only after a 5 minute cooking time?

I think when I made it once, they did rise to the surface quickly. It doesnt mean they are completely done. Just continue simmering then until done to the bite. The smaller or lighter the dumpling or noodle, the quicker that is going to happen.

I make spatzle all the time and it almost always rises to the top immediately. To make a richer spatzle replace part of the egg white with another egg yolk.

Might also try other food sites since AR has no test kitchens and compare the directions. This one at Food Network which DOES have test kitchens suggests boiling for 2-3 minutes.
