Hi everyone! For dinner,I'm making arancini in a pool of my marinara sauce (actually already made from a previous meal and frozen), hot Italian sausage and peppers and would like to roast zucchini and a Japanese eggplant for a veggie side dish. Must I peel the eggplant or will the peel soften sufficiently from roasting? Thanks, friends!

Hi Cathy, i hope your feeling better. I don't peel the eggplant but i don't think i have had a Japanese eggplant. Is there a difference? If not i would slice it put the slices on a cutting board tilted, salt them and let them drain for about 15-20 minutes then dry with a paper towel..

Thanks so much, Manella! Japanese eggplants are small and thin tubes, a little bigger than a large cucumber. I'm steadily getting better. Meds are finished and coughing spells aren't quite as violent, sleeping better - all in all, I'm slowly making a come back. Thank you for asking, my friend!

Good to know your getting better. I would cook it with the peel on, to me if you peel it it will be mushy, and eggplant is mushy enough:))))

Oh Candice, my darling sister! Tears fill my eyes to see you on line when so close to the LV Saturday Round Up! I'm slowly making a come back but still lack the energy to leave the house. My Marianne! Aren't you and Russ suppose to be in San Francisco? Are you "Candice" 'cuz she used your computer? Didn't that happen some other time? I'm spending tons of money ordering summer clothes on line to stave off the boredom ill health brings! Sigh....... Have a wonderful trip, my beautiful friend!

Hi Cathy, glad to see you feeling better! I never peel eggplant. I may be wrong, but ii think there are nutrients in the peel and it is certainly edible after roasting.

Thank you, BSM! I have sliced the eggplant in 1 inch chunks and salted with sea salt. It's draining now as Manella suggested. Thanks for helping a sister out, friends!

We haven't left yet. Yes, it has happened before. It's one of their little problems! Or my computer's. Sounds like you'd better get healthy soon so you don't spend all your money!
