Easy peasy here last night. Leftover chicken strips over a giant salad. Boring but good and quick. Have a great day everyone!

Nope cannot be beat! We are both so tired and sore from working in the yard. He finished my garden prep yesterday so I am ready to plant. Now if Mother Nature will cooperate!

My meal was similar-a large salad with a hamburger patty on the side. It's early to plant here; I haven't done any prep work and don't know if I'll have a garden this year. It's been so windy on my days off that there's really no way to work outside. I did get my small chipper/shredder, though, so once it gets put together I'll be able to clean the yard without as many trips to the landfill. Especially good to not have to handle rose bush trimmings more than once. :)

Elle, yes still a bit early but I'm like a kid waiting for Santa! The wind has been crazy here too. Those roses will get you every time. I'd love to have a chipper/shredder!

I wish I could work in my yard, could really use the distraction right now. Its like therapy to me but we are getting a big snow storm here again..ugh. Winter you can go away now!

We drove over to Alexandria yesterday to walk thru the town. We found an Irish Pub, so I tried scotch eggs for the first time. I enjoyed them. We are eating at all local places, no chains. DH is LOVIN' all the fresh seafood. So far he has had rock fish, crab, lobster, tuna and crab cakes. I've had a variety of things, no seafood, except a tuna sandwich.

Logan was out for dinner with friends. So, Serenity had mozzerella sticks and Healthy Choice chicken noodle soup. I ate the left over tuna and noodles.

Hi, concocted this delight. cheers Poached Trout with Roast Asparagus - New Potatoes and Malagueña Lemon and Dill Vinaigrette TROUT 2 Large Trout Fillets - Skin on one side 1tbsp Salt Water/Whole Milk FOR THE ROAST ASPARAGUS 2 bunches Asparagus - trimmed and peeled 2tbsp Extra Virgin Olive Oil - plus extra for drizzling Salt and freshly ground Black Pepper FOR THE NEW POTATOES 400g/14oz New or Salad Potatoes - halved Extra Virgin Olive Oil - for drizzling Salt and freshly ground Black Pepper Malagueña LEMON AND DILL VINAIGRETTE 30ml/2tbsp Extra Virgin Olive Oil 15ml/1tbsp White Wine Vinegar ¼tsp Garlic - finely chopped 1tbsp Dijon Mustard 1tbsp Dill - finely chopped Squeeze fresh Lemon Juice - to taste Salt and freshly ground Black Pepper






METHOD
TROUT
¾ fill a large frying pan with water, whole milk or a mixture of both, add 1tbsp cooking salt and, over high heat, bring to boil; When water/milk approaching boil, add fish - skin to pan floor, reduce heat to low and cover; Depending on thickness of fillets, poach for some 4 to 10 minutes or so or until fish just cooked through; Remove from heat with spatula and drain on kitchen foil; Remove skin ASPARAGUS Preheat Oven to 200c/400f/Gas 6; Toss the asparagus, olive oil, salt and freshly ground black pepper together in a bowl,; Lay asparagus onto an oiled baking sheet and roast, turning once or twice, in the oven for some 15 to 20 minutes, or until the asparagus is tender; POTATOES Preheat Oven to 200c/400f/Gas 6; Place the potatoes in a large roasting dish, drizzle over with olive oil and season; Roast in the oven, turning once or twice, for 20 to 25 minutes or until tender. DRESSING In a small bowl, combine, stirring well, the mustard and vinegar together; Add, stirring continuously, the dill, garlic and lemon juice; Gradually, whisking continuously, add the oil; Season, to taste, with salt and pepper; Serve or can cover and leave to sit for 30 minutes or so before using. SERVE To serve, pile the potatoes on plates with the asparagus and poached trout; Add dressing as desired.

Wonderful Don! I almost grabbed asparagus the other day. Darn price went back up to $4 a bundle. Waiting for my own in the garden now.

Good morning; I did a pork roast last night. In my roasting pan added about 2" of water to this I added 2 bay leaves and several whole cloves. Once i placed the roast on the trivet springled the roast and water with garlic powder, dry basil leaves. Cooked at 350 for about 2 hours. part way through added tatters and carrots. served with toss salad which i had added from fruit for a change.

I have bay leaves tucked behind a cabinet inside and along the outside porch where they travel into the house. Also put a lid with cornmeal outside near the trail too.

thanks for the info do get some ants in spring but had always left out ant traps. will have to give this a try.

Good Morning L.N. and everyone, I picked up a rotisserie chicken and had potatoes with a packet gravy called "better than gravy" made by superior touch, it comes in a dry packet and you add water and oh my was that gravy fantastic! Bf tried it and said this is the best gravy you have ever made and when I told him it was a packet he didn't believe me until I showed him the packet! I don't even remember where I bought it..ugh. I will have to figure it out and stock up....highly reccomend this one if you want gravy but can't make homemade. Using the leftovers for soup tonight to get ready for the 8 plus " of snow coming Tommorow.

Capt'n D's fried fish and fixin's. We went and picked up our new boat and it was late, so stopped by and got that for the two of us. Cheap and my hubby loves their fish.
