Hi all, I have just accepted a sort of invite to lunch at my home for an old pal. She is excited to try my cooking but as this being my first "lunch" I am at a loss for something elegant yet unobtrusive. I suggested shrimp tacos and she has a shellfish allergy so I am unsure. This is Thursday. I can shop and prep anything tomorrow. Also an adult beverage to go with the dish (we aren't lushes but what's a cocktail on your day off with a good meal). Thanks so much

I've made this, well not this recipe but my own pot pie recipe for luncheons with some roasted asparagus and white sangria to drink.

I also make a veggie lasagna with alfredo sauce instead of red sauce. People love it. Serve with a nice side salad and some white wine.

How about a Mexican theme. Have chips, salsa and queso (I have a yummy recipe for that) so you have some snacks to chat over then make these enchaladas and pop them in the oven when your ready. I also add a handful of cilantro to the sauce. Have some mexican rice and refried beans on the side.

This is as close I could find to my grandmother's recipe. Add cumin and tomato sauce or canned tomatoes are fine to use too.

This with a nice baby greens salad and home made dressing. You can use other ingredients for the quiche i.e. ham and or bacon etc.:

I love this with citron vodka instead of the vodka and lemon juice, champagne a little simple syrup served chilled and up in a martini glass with a sugared rim:
