Do you HAVE to use vanilla extract when making a cheesecake?

Vanilla enhances the flavor but you can use any flavor or extract you like.

You don't have to, but it does make a difference in the final flavor. As Marie said, you could use another flavor extract.

MelissaAnn - I don't know what recipe you are using. For a plain cheesecake, I put the grated rind of either an organic lemon or orange for flavor, which you could do if you are making a plain cake and don't have any extract.

I like almond extract, if your cheesecake is a plain one. It gives the cheesecake a rich depth of flavor. Toni Gommy of 5 (and "pending")
