We are having a breakfast potluck at work tomorrow for Bosses Day. Do you have any TNT breakfast recipes that do not require a lot of prep time? I'm thinking about maybe a casserole of some kind, but I am open to any suggestions. Thanks!

Not at work, but I am only 20 minutes from my office and we are eating soon after we arrive.

This recipe is really good. I've added all kinds of things to it. Bacon or sausage or broccoli instead of spinach, etc, etc. No crust, so it goes together quick. You can bake it at home, then warm it in the microwave.

Hi, something different ---easy to prepare -- no cooking and serves about 6. cheers. Swiss muesli This is a great healthy breakfast. Ingredients 170g/6oz rolled oats 170g/6oz raisins or sultanas 110g/4oz dried apricots, roughly chopped 110g /4oz hazelnuts, split in half and roasted 350ml/12fl oz fresh apple juice 2 apples (coxes or granny smiths) peeled and coarsely grated 1 small tub Greek or natural yoghurt 4 ripe apricots, roughly chopped clear honey to serve Preparation method 1.In a large bowl mix together the oats, raisins, apricots and hazelnuts. Pour over the apple juice and leave for 10-15 minutes to allow the oats and dried fruit to soak up the juice. 2.Divide the muesli between 6 glass bowls and top with the grated apple. Spoon on a dollop of yoghurt and drizzle over some honey. Serve immediately.

These are easy and very good! They can be made and then cooked in the morning and make great hot rolls for special mornings (like Christmas or Easter). Everyone will think that you got up very early to make these rolls because they are hot in the morning!

I love to do the overnight frnch toast casseroles. The Blueberry Overnight French Toast recipe is here. At this time of the year, my favorite one is a plain overnight french toast (no fruit) with apple cider syrup. I can post it, if you are interested. Toni Gommy of 5 (and "pending")
