I made these last year and the skin was great but they were dry. I have since read reviews of people only boiling for 15 I think I will do that...BUT do you think I could do it the day before, then cover it in the marinade/spices and stick it in the fridge? I just want to ensure I get the flavour infused and that to me means it needs more time then immediately before grilling. Thoughts? Thanks!

I think if you boil them the night before baking they will really dry out. I brine mine so that they are flavorful and moist.

well I am not supposed to bake them - we just grill them quickly to crisp up the skin mostly.

I just know with ribs I have baked the day before grilling and it turns out perfect. But yes, that's different from boiling them.

I agree with Semigourmet that brining is the way to go. Just grill them low and slow and they will turn out much better than pre-boiling out all the fat and flavor.

and Like Miss Kitty said grill low and slow also if you want really crispy skin, brush with olive oil and you can season if you like, that will really crisp the skin nicely. if they are done and not brown enough pull them to the hot side of the grill for a bit to brown turning pretty often.
