Good Morning! I am canning tomatoes. Is it possible to prepare (clean/skin chop/drain) and stop at this point- and can them in the water bath tomorrow? If so how would I store them overnight? I always seem to run out of time and thought maybe I can do it in two steps!! TIA

It was a ton of work for me a few weeks ago, post surgery. Thank goodness I only had a small amount. I would clean, skin, chop, drain and put in a covered dish in the fridge. Check with the other experts here (I haven't done this in years!). I would think you'd want to take them out of the fridge to room temp before adding to your jars. Good luck! I love my jars smiling at me when I open the cupboard!

ohhh I don't know how you could do this after surgery- my back is already killing me!! But, I agree nothing better than having those yummy things to eat all winter!!!

I think you should get them warmed up somehow after being refrigerated. If you put them cold in the jars and then into boiling water, some glass is going to break! Also if you are water bathing them, please be sure to put either lemon juice or citric acid in the jar also.

Thank you!! I'm using the ball canning book- and it calls for lemon juice/salt and hot water to add to each jar.

Absolutely you can do this....but definately cook them first before you put them in jars. BTW_I've never used lemon juice in my tomatoes. Usually I make homemade spaghetti sauce, but this year I have NO TOMATOES!!!!!! OMG!

thanks crazy cat- I had to buy my tomatoes :(( We haven't had our garden in 3 years...I miss so much!!!
