Someone posted a personal peas and rice recipe to me quite a while ago. My RB is stubborn today and not giving me the recipe. Anyone have a personal peas and rice (with spices) recipe for me to try?

Hi, this any help. Can use long grain if wish. cheers Venetian Risotto - “Pisi - e - Risi” 75gr/2┬Żoz Butter 1 Onion - finely chopped 250gr/8oz Risotto Rice; 150ml/5fl oz dry White Wine 450gr/1lb frozen Peas - defrosted 1litre/2 pints HOT Chicken Stock 2tbsp Flat leaf parsley - finely chopped Salt and Freshly ground Black Pepper 60g/2oz Parmesan Cheese - grated Melt 50g butter in a large frying pan; Add the onions and cook gently, stirring occasionally, for some 2 minutes or so until the onion softens; Meanwhile, ensure hot stock is ready, simmering in another saucepan; Add rice to onion mixture and stir for some 2 minutes or so until rice begins to pop; Add wine, and continue stirring until almost absorbed; Add a little stock, stirring until stock absorbed, then add a little more and repeat the process; Stir often to ensure rice stays separate, always allowing rice to absorb the stock before adding more; After 17 to 20 minutes add peas, increase to high heat until boiling, then return low heat; After 20 to 25 minutes, rice should be moist and creamy but with still a slight bite; Add remaining butter, season to taste and stir until butter melted; Serve hot with grated cheese and crusty bread on side.

With all the fuss that goes into holiday meals, it's nice to find a side dish like this that's both satisfying and simple. The pimientos and peas nestle among rice delightfully seasoned with sage and chicken broth.
