Instead of frying, you could bake these using Pam spray or on parchment paper... serve steam veggies on the side (any vegetable(s) you like: carrots, green beans, peas, baked sweet potatoes, rice pilaf, etc.)

The marinade adds flavor... You could grill veggies with the salmon, like sliced zucchini or eggplant.

Lime-Marinated Grilled Salmon

The fresh lime juice and mustard add a nice tang to this moist and flaky grilled salmon. I came up with this marinade after tasting something similar at a friend's house and it is now one of our favorite ways to do fish. You may also use other firm fish steaks instead of salmon; halibut, tuna and swordfish all work well.

This is also in my Recipe Box. I have not made it yet, but it sounds delish. I like poached salmon. Even if you drizzle just a small amount of melted butter, just a little adds tons of flavor. IMHO

Hi; one way I enough salmon is in a fry pan add about 3 tbsp of olive oil and 1 tbsp of butter or margaine. To this I add 1/8 tsp of dill weed. Allow to heat up on medium high then add the fish. Cook about 3 min per side when almost cooked add a squeeze of fresh lemon.
