I would love to make some jams, but I am a diabetic and the recipes all call for so much sugar. Can I replace the sugar with "Splenda"? Will affect the taste or consistency?

I don't think Splenda will work. However, I make low sugar jam using a product called Pamonas Pectin...it works great. http://www.pomonapectin.com/

So, you don't add any sugar to your low-sugar jam?

No you cannot replace Sugar with Splenda but you can get a low-sugar variety of Sure-Jell Pectin that uses Splenda. I have always gotten a slightly softer jell and it doesn't keep quite as well after it is opened (for me at least) but it is a nice thing to have.

Thank you both for your insight. It's hard (all of a sudden) to cut out sugar from your diet ... I have found it very challenging.

yes, you can use Splenda but you need to buy the no sugar pectin, you cannot use the regular pectin, here is a link to the site I use for canning.

I cook splenda al of the time. I find it doesn't affect the taste of foods. Regarding your jellies and jams, I put non-fat jello in my jams and jellies using the same type of fruit you are using. You can also add more pectin for a tighter consistency.

They do make Splenda that measures and bakes just like sugar. It comes in a box not the small packets. I use it to make goodies for my diabetic neighbor.

It says Splenda granulated on the front of the box.
