you could do some sliced half moon zucchini in foil or in a pan with onion, garlic, Italian seasoning and some diced tomatoes salt and pepper.

This looks really good, IP. There's lots of flavor going on so I would probably use the author's suggestions of a lightly dressed pasta and a green salad. Let the meatloaf be the star of the show tonight. Enjoy!

Some roasted veggies and potatoes would be nice. To go with the Italian theme, I would probably do spaghetti in a light sauce with some veggies in it, or a side salad to go with it.

Hi; you could do something like this but replace the ravioli with what ever pasta you have on hand.

You could make an easy pasta side dish with cooked spaghetti, heat about 1/8 cup of olive oil in a skillet over medium low heat, add red pepper flakes, and garlic heat the garlic until the raw flavor is gone, then add pasta and toss to coat. top with parmesan cheese and serve.

I travel in my job, and meatloaf is "comfort food" in a hotel room...I'd recommend garlic mashed (though au gratin sounds great!) some sort of gravy, mushrooms, carmelised onion, and peas and carrots...
