I like roast potatoes, toss them with salt, pepper, some paprika, and some olive oil.

I like roasted potatoes too. I also add a chopped red onion in chunks and throw in some whole garlic cloves with the skins still on, the roasted garlic goes great with the potatoes :)My Kids love twice baked potatoes or mashed.

The onions and garlic sound really good. I make mashed a lot but never make twice baked. Do you have a go to recipe westcoastmom? Thanks! :O)

I love potatoes too! Especially cheesy potatoes. This takes a little bit to cook but well worth the wait!

^ This is our go to au gratin recipe, been making it for ten years now I think, I wouldn't have them any other way! We always have it at Easter or whenever we have a Ham. I totally forgot about that one, thanks K-dub :)

There's quite a few twice baked recipes on here, but they all use too much sour cream for my tastes! This one doesn't have any. I bake them whole for about an hour at 400f(or cheat in the microwave) Once cooled a bit, slice length ways, scoop out the flesh leaving some for the skins to stay attached. Mix just as you would your favorite mashed recipe. Put the mashed potato back in the shells. Sprinkle the tops with cheddar cheese and bake again until the cheese is melted. Then we top it with bacon bits, sour cream, chives or green onions. If I want it healthier I'll mix broccoli in the potato too :)

Mashed Potatoes The secret is to reduce the starch ---- Cut up potatoes --- rinse to get rid of some starch --- Boil until softish --- drain--- dry out a bit, FOR ME IMPORTANT TO REDUCE MORE STARCH --- add whatever --- butter/milk/cream/egg/ spring onion/cheese etc. Hope helps. cheers
