We are very short on groceries til Monday. I do have a can of corned beef. Anyone have a great recipe using few ingredients? We have no sourkraut.

You guys are making me hungry! Corned beef hash just rocks! Can I get eggs, toast, and steamed peas with that? Could stretch to two meals....?

The great Scottish standby with corned beef, cheers Scottish Stovies Ingredients: Left over Roast Beef - diced or can use Chicken or Corned Beef - shredded 4 large Tatties (Potatoes) - partially boiled and sliced 1 Onion - thinly sliced 1 tbsp Dripping (from cooked beef) or Lard A wee touch of Beef Stock Salt and Pepper Add a wee bit of lard to a pot and gently cook the onions until soft; Add the beef or other and salt and pepper. Layer over with tattie slices and cover with the stock to taste (depending on how moist you prefer the meal); Suggestion - add a wee bit and top up as required. Simmer on the hob for about an hour or cook in the oven at 190c/380f/gas 5 for about 50 minutes.

If you have some Swiss cheese and maybe (but not necessary) Caraway seeds you could make open faced reuben type sammies with out the sauerkraut

Chairlifter took my idea. I was going to say eggs and toast with that. Sounds delish to put a side of peas too. Right now I'd add some potatoes to that. I guess I'm hungry too.!

Canned corned beef is combined with macaroni, cheese, cream of chicken soup, and vegetables. The assembled dish should be refrigerated overnight before cooking.
