I have to make a lot of French meringue cookies for a baby shower this weekend and I hate to waste all the egg yolks........any ideas for using them up have made a flan already this week so I am game for any other ideas

You can actually freeze them to use later. They'll keep for up to a year.

The easiest way to get perfect Hollandaise sauce is to use a blender. This recipe has all the same ingredients as the classic, but no double boiler and no chance of the sauce separating. I love the lemony flavor on fresh steamed asparagus!

I did a search on this website just with the ingredient "egg yolk" and turned up a lot calling for just the yolks. Funny how I remember this feature when I don't need it myself. :)

I whisk them up and then freeze them. I usually add them to French toast batter.
