I just the other day used the hog rub and yard bird on my country style pork ribs. I had a bottle of spice mix in there somewhere but couldn't find it. Spied the Oklahoma Joe and said, heck, I'm using this cuz I can find it. I did rub and leave overnight. Once the ribs were smoked I had to test. Ate a whole rib it was so good, who needs sauce?

Sounds great! We had BBQ sauce yesterday actually it was Sweet Baby Rays sweet chili glaze, very good by the way. A little tangy. Really didn't want any sauce today. Thought about a rub cause I like crispy skin, so bad!

What is a yard bird? What is a spatchcock? Though I knew a few things, Ha! Have to go look these up.

Yard bird is any foul..Spatchcock is when you cut out the backbone so the bird lays flat but whole. http://www.cookthink.com/reference/4162/How_to_spatchcock_a_chicken

lol Joan! A yardbird is a chicken. Spatchcock means you take a whole chicken, cut out the back bone and open it like a book. Lay it flat on the grill.

Jack Daniels BBQ sauce it make for perfect marinade

Hi, needs long time marinade but id magic. In reality is authentic tandoori chicken marinade. cheers. MARINADE 3tbsp Greek/Greek style Yoghurt 4 cloves Garlic - chopped 2in piece fresh Ginger - grated 1tsp whole Cumin Seeds 2 dried Red Chillies ½ tsp Red Food Colouring Put all ingredients except food colouring into a bowl and blend together with hand blender; Add food colouring and blend into mixture; Coat and rub this mixture into chicken;

Hi PC If you are going to spatchcock, why not take the extra 5-10 minutes and completely debone? That way, you get your seasoning straight onto the meat, where it works to best effect. For a wet rub, I'd be going with Daddy Hinkles, and a dry rub of Rooster Booster.
