Hey Duboo, I was going to try that one this week too. I bet you could make your own with plain spreadable cream cheese mixed with canned pineapple tidbits. Just chop the tidbits up smaller first. Or if you have a manic bullet give the pineapple a whirl first.

I need a new name. Anyways I told my missus that I was going to make her chick sandwiches and she said she has no idea how a sandwich could be a chick sandwich. I said trust me, these are. I'm beside myself and can't wait to make them. I wish I could do it today as I have fresh buns. If I only could get strawberries...

Hi duboo! Thanks for asking & it is so sweet of you to cook for your better half! This sandwich came about from one of our favorite summer salads something like this one. Except poppyseed dressing, grilled chicken, always strawberries & whatever other fruit I have. ~~ I remembered you said before you might not find the pineapple spread (post id# 302270) & I said I have had to make my own. I looked at a few of the recipes on the site you listed but I think just pineapple & cream cheese is best. Don't need to add salad dressing or mayo to it. Certainly don't need to add sugar since these sandwiches are already sweet. You could add a little pineapple jam to cream cheese but then you are adding more sweetness. Some of the recipes on that site mentioned nuts & that would probably be good but I'm allergic so could not even begin the recommend which nut would be best. I do recommend waiting for 'good' strawberries. We have some in our store now but they don't have much taste. I'm the crazy lady in the produce department picking up boxes of berries, taking a deep whiff &, if they don't wow me, I put them back!

Thank you for your reply. We aren't sweet freaks, so I doubt I would add anything that would sweeten it up. As for nuts, nope. Missus likes nuts, but alone, not in her food. After 23 years, she has trained me to be the same. I'm the same way in the produce section. If I do find something especially nice, I will buy it and figure out later what I'm going to do with it. My options for strawberries right now are none or frozen, so we wait. That's the price you pay for boondocks living. I wouldn't have it any other way.

This is what I'm planning on making with it. I was also going to use fresh pineapple or apples instead of the strawberries since that's what I normally use in my chicken salad.
