I'd make the flourless pumpkin pie tartlets. Seems like they would be light and perfect for this time of year and even better with a little vanilla icecream.

make in ramikins if you have them. you may have to eat it out of the ramekin but it'll still be good.

lol- funny- 4 kinds of ice cream in the freezer- only hubby eats it- i am too lazy for cheesecake today(to make- not to eat)

this may sorta work- i don't have butterscotch bits- but peanutbutter ones- 2 bags i bought to make "payday bars"- ummmm maybe
