Hi everyone, i was looking for recipes that use green leafy vegetables, i was diagnosed with a brain anyuerism and some of the research suggested a diet of green leafy veg. I have never had much more than a lettuce salad so i am now on a quest to eat better....thanks for your help

This is a great, easy summer salad with a lot of options as to mixing and matching. When the Gorgonzola cheese and balsamic vinaigrette combine it gets all tart and creamy!

Roasted beet pieces nestled among their sauteed greens makes a beautiful, delicious side dish. If yellow beets are available, double the recipe using a bunch of red and a bunch of yellow, they're gorgeous! I think these go especially well with pork or chicken. This recipe can easily be doubled, tripled, or expanded to whatever amount you need without adding very much to the preparation time.

Tis the season for fresh from the garden but don't forget the freezer of your grocery for ready to go greens. I recently used frozen collard greens for the first time in a soup. A 1 lb store brand bag was a buck. Super easy to nuke and add to my soup. Frozen would be quick and easy to add to any drink/smoothie you might make and no washing/prepping involved. Plus I always have the problem of not having enough room to fit the larger bulky greens in my fridge. A couple of bunches of fresh kale, chard, collards, take up a LOT of room.
