I made a tasty sun-dried tomato and roasted red pepper dip, however the next day the tomatoes turned black and look quite awful. They were not the packed in oil kind. Was that my mistake, to use the dried ones instead of the oil-packed kind?

I can't answer your question, but will tell of my experience drying tomatoes. They quickly go from red to black during drying. I don't know if there is a way to treat them so that does not happen. I'm curious about what you discover!
