Hi everyone! I've been asked to make choclate peanut butter cupcakes for a wedding shower. I'd like to do something a little different then using chips. Could I use peanut butter instead of cream cheese using the technique in this recipe or would the peanut butter center disappear into the cake? Thanks for your help!

The 'middles' part of this works great for what you are suggesting. I had a tub of choc chip chunk cookie dough to use and layered it with the pb/conf sugar mix and topped with the choc chip dough as a bar. It was fantastic!

It doesn't disappear, if you plan on piping it, use less of the sugar, it is pretty stiff otherwise.

I also think that the peanut butter and poweder sugar would work great. I recently made carrot cake with a cream cheese center they were so good! I have been thinking of trying a chocolate peanut butter cupcake next. Sounds really good. Let us know how it turns out!

I haven't made these but I have eaten them (yum!) and I bet chocolate cupcakes with frozen PB cookie dough would be fantastic.

What about a peanut butter filling. You can get Frostin Pride at Smart and Final to use instead of Bettercreme. Peanut Butter Filling 1 jar creamy peanut butter (2 c) 2 pkgs cream cheese 2 c powdered sugar 2 T vanilla extract 2 C Bettercreme
