Good morning Sherri! I'm feeling better...just stuffy nose, sore throat. Hoping I don't get hubby's cough. It's a nasty hacking one that's hanging on like there's no tomorrow.

This is a great, easy summer salad with a lot of options as to mixing and matching. When the Gorgonzola cheese and balsamic vinaigrette combine it gets all tart and creamy!

Mini - Burgers with Rich Onion Gravy, Mash and Mushrooms BURGERS 750g/1½lb Mixta - 70% minced Beef to 30% minced Pork or Beef Mince 1 clove Garlic - finely chopped 15g/½oz Spring Onion - finely chopped 1tbsp fresh Thyme Leaves - chopped 2tbsp fresh flat leaf Parsley - finely chopped Splashes Worcestershire Sauce - to taste 1 Egg Yolk - lightly beaten 45g/1½oz Butter Salt and freshly ground Black Pepper Apart from Butter, mix all ingredients together, season to taste and form into small balls; Flatten the balls, shape into mini - burgers about 2½in/6cm in diameter and place on baking tray; Put tray in fridge and chill burgers for 30 minutes to an hour or so; Melt butter in frying pan, add the burgers and cook on medium heat; When sufficiently browned on one side, turn over and cook steadily until meat just cooked through with juices running freely and clearly; Serve. ONION GRAVY 30g/1oz Butter 1 large Onion - sliced 200ml/7fl oz Red Wine 100ml/3½fl oz Beef Stock 1tsp Dijon Mustard Salt and freshly ground Black Pepper Heat the butter in a frying pan on a low heat, add the onion and cook for some 30 minutes or so, stirring occasionally, or until the onion is golden-brown but not burnt; Reduce heat, pour in the wine and stock and allow to simmer for some 20 minutes or so, or until the liquid has reduced by half; Stir in the mustard and season, to taste, with salt and pepper; Pour into large serving sauce boat MASH 700g/1½lbs Potatoes - peeled, sliced, cooked, drained and dried out a bit 75ml/2½fl oz Milk or as required Salt and freshly ground Black Pepper Mash everything together into a still with some body, smooth mash Season to taste and serve MUSHROOMS 250g/8oz Button Mushrooms - cleaned and quartered 45g/1½oz Butter 1tbsp Extra Virgin Olive Oil Salt and freshly ground Black Pepper Melt the butter and heat the oil in pan, add the mushrooms and cook on medium heat, stirring occasionally, for some 4 minutes or so until golden and tender but still with some bite; Season to taste and serve

Good morn'g or I should say good after noon Don! Burgers sound good to me. I do not put thyme in it though...maybe I'll try that next time. Enjoy those burgers!

Cheryl, I had empty nest syndrome a few years before any one moved out - bc they were all talking about moving away. Then, their plans all changed, and I got the idea in my head that we would all grow old together - lol! My middle one mode out first, to be near school. She didn't have her license yet, and was having to take the train, which was seriously limiting the classes she could take. Then, a year layer, my oldest and youngest moved out within a couple months of one another. I was so surprised! It didn't bother me as much as I thought it would (= I do get middle of he night phone calls when they are sick, or the baby won't sleep, though {=

I have a bunch of teenage girls hanging out at my house today. No one knows how long they'll be here so I'm not sure how to plan dinner. I also need to figure out lunch. I have leftovers of this & I'll make sloppy joes, I think, for 1 meal. Now that I think about it, I'm not even sure if I have ground beef. Ugh. Maybe I'll whip up some quesadillas for lunch. I do have a big pkg of tortillas & some lentil taco filling in the freezer. Or I have a TON of deli ham in the freezer, but we're kind of over ham, ya know?! I think I should've gotten up earlier to plan this out a little better ;) Thanks for listening to me ramble. lol.

IDK if any of them cook but none of them drive yet :) I decided to make this....http://www.mydailymoment.com/recipes/crockpot_spaghetti_chicken_in_white_sauce.php....along w/Cole's bread sticks, which I picked up bogo. I also have leftover layered salad & some leftover veggies from Easter(corn, carrots, asparagus). I suppose if they're picky, they'll starve :) JK. I don't think they're staying for dinner ;) For lunch, I'm making grilled ham & cheese sammies, potato salad, pickles, & chips. I also just pulled some brownies out of the oven. Hopefully they'll be happy w/that.

I think where I'm going my choices will likely be popcorn, chips and salsa, and wings. I don't do wings, so my dinner "plan" will be a BIG lunch and sneaking some snacks in my pocket :)

Good morning all! Usually I have NO CLUE what I'll be making for dinner, but I do have a plan for tonight since friends are coming over. These sweet potatoes, with white ones added also. Yummy yummy fresh steamed asparagus. Ham slices from the Easter ham. Have a great day. Cool morning in Indiana, but sunny!

Great idea! The fresh asparagus sounds good, too. I still haven't seen any poking through the ground here...starting to worry that it didn't make it through last year's drought.
