Christopher saw your beautiful picture of the shamrock cookies and wants to make the exact ones...lol. so my question is what is in the middle of those beautiful cookies and what icing did you use? It's going to be our project tonight! Thank you!

Those do look lovely! I've started using SMB for fillings, but the kids still prefer the sickeningly sweet powdered sugar version.

This is a rich, dark chocolate topping or decoration that has lots of uses. It can be whipped as filling or icing, or just poured over whatever cake you like.

Morning, Kori! Awww, so glad that he wants to make them! After I mixed the dough, I tinted it green, refrigerated, cut out and baked. Meanwhile I made this ganache (minus the rum), and allowed it to cool to where I could spread it on the cookies w/o it running out. After I sandwiched them together and let them dry a bit, I brushed the tops w/ a simple powdered sugar/water/vanilla glaze and dipped them into green sanding sugar. There's no recipe for the glaze, just make it thin enough to brush on. :)

The ganache was slightly thickened, not real stiff, if that makes any sense, lol. You could also fill them w/ preserves if you don't feel like going through all of that, lol, but it was really easy, just a bit time consuming.
