Hello! I am having guests over for UFC tomorrow evening. I am looking for some good snack/appetizer recipes that are vegan and fairly healthy as I am on a strict low (healthy) fat type diet. Any ideas? Thanks guys!

Will keep thinking for you, but I made this recipe myself a week or so ago and it's great. You don't need the veg oil. Just blend the nuts and raisins, then roll in crushed nuts. So good! Could also add carob if you wanted to.

This is a fast and fresh salsa made with roma tomatoes, canned tomatoes and green chiles, cucumbers and cilantro.

I just made and photographed this. It's very good. If you don't like it too spicy leave out the jalapeno. There's enough heat from the cans of diced tomatoes and green chilies.

Watermelon Fire and Ice Salsa

Juicy watermelon replaces tomatoes in this salsa that's simultaneously cool and spicy hot -- perfect for a summer barbeque. Serve it with tortilla chips, or use it as a topping for grilled chicken or fish.

Everything goes into the food processor - garbanzo beans, tahini and lemon juice. Then roasted red peppers and basil. Chill and enjoy.

Ok one more. This is from another site. If you can get kabocha squash, this is s recipe to make them into vegan 'tater' tots. Full of flavor and lower in calories and carbs than butternut squash. Absolutely delicious!!!!!!! http://www.eatingbirdfood.com/2012/11/roasted-kabocha-squash-tots/

This simple appetizer needs only dates, kale, and almonds (and toothpicks) to prepare -- and is sure to be a crowd-pleaser with a lovely mixture of sweet and savory.

If nuts are too fatty, then you could try a different filling inside the date!
