Cliff, your ? had me curious (sent to my post by mistake). I have a Hawaiian Bar recipe that is basically shortbread, pineapple cheesecake, and coconut on top which toasts. If you'd like it, let me know.

Hi Cliff, 3 summers ago i made an hawaiian cake, made a nice pineapple sauce to spread on the top then a creammy topping for it, it fed 55 people i made 4 cakes then put them on a huge cake board then after the toppings i decorated it with flowers and made it fancy, everone loved it and my daughter in law requested that i make it for her wedding shower!

Thanks Nanny 129..emeralds I would very much like to have your recipe... BW hope you get some good response, this cake texture was not heavy with pineapple and the cream cheese frosting was sooo good and smooth, dont know how they made it but was awesome. The owner said it was a recipe her mom had for years one of the best cakes I`ve ever tasted.

Quick, Easy, Yummy! Pineapple makes it moist and walnuts give it some crunch.

Cliff, Is it ok that I give you the recipe tonight? And I'll have to list it here because I don't yet know how to post recipes (eventualy I want to put some in my RB and link them). Be forewarned: it is hard to stop at one!

And should I give it as a new post? Maybe other buzzers would like to see it. I'll check back in a bit re both questions.

Here's the recipe. Hawaiian Cheesecake Bars 1) 350 degrees, 9x9" ungreased pan, 15-20 min baking time 2) crust: 1 c flour, 1/2 c sugar, 1/2 c butter Combine ingred until a fine crumb, press into ungreased 9x9" pan, set aside. 3) filling: 8 oz pkg softened cream cheese, 2 T sugar, 2 T milk, 1 egg, 1 t vanilla, 8 oz can crushed pineapple, well-drained Mix first 4 ingred, stir in vanilla and pineapple. Pour on crust. 4) topping: 1 c coconut, 1 T melted butter Combine coconut and butter; sprinkle on top of filling. 5) Bake at 350 for 15-20 min - until coconut is toasted. 6)I've not made these for awhile and as I recall, I never pre-baked crust. One of my favorite recipes, Mom started making these in the '70s. Enjoy!
