The squash dish I make weekly. When I fix he Braised Balsamic Chicken I double the sauce and mix with pasta. The pasta/sauce mix even tastes good cold if you have some leftover.

Hi C, don't really do healthy but this is nice. cheers. Mediterranean Tomato Soup 2tbsp Extra Virgin Olive Oil 2 cloves Garlic - chopped 1 Large Red Onion - chopped 1 Carrot - sliced 1 stick Celery - chopped 500g/1.2lb ripe Tomatoes - peeled and chopped 24fl oz/1½ pints Chicken Stock 1tsp Sugar Salt and freshly ground Black Pepper TO SERVE Fresh Basil - shredded Heat oil in a large saucepan, add onion, carrot, celery and garlic, and cook gently, stirring occasionally, for some 5 minutes or so until soft; Add sugar and tomatoes, season to taste, stir well to mix and cook, stirring occasionally, for a further 5 minutes or so until the tomatoes begin to soften and break up a bit; Add the stock, bring to the boil and, reducing heat, simmer gently, uncovered, for some 15 to 18 minutes or so until reduced and thickened a bit; Remove from heat and “Blitz” with a blender until smooth; Ladle into bowls and serve with the option of basil on the side.

OR Simple Bacon and Vegetable Soup 2 tbsp Extra Virgin Olive Oil 150gr/5oz streaky Smoked Bacon - chopped 1 Onion - chopped 2 large Carrots - chopped 75g/2½oz Turnip/Swede - chopped 2 sticks Celery - chopped 4 fresh large Tomatoes - peeled and chopped 3 large Leeks - white and green bits - chopped 60g/2oz Cabbage - shredded 1 litre/2 pints Ham Stock Salt and freshly ground Black Pepper. Gently fry bacon in oil for 3 to 4 minutes until slightly browned; Add onion, carrot and celery and cook gently for about 2 minutes until slightly softened; Add tomatoes, leeks and cabbage and continue to cook gently a further 8 minutes; Add stock, season and bring to boil; Simmer, covered, for some 20 minutes or until vegetables are tender; Remove from heat, "Blitz" with blender and taste for seasoning;

I reduce the amount of sugar in the dressing cause otherwise it's pretty sweet. Now I am hungry :)
