Popovers

The secret to light and airy popovers is a very light touch in mixing and a very hot oven for baking. These are best served hot from the oven.

I haven't tried this recipe, but everyone loves popovers, and they have no sugar in them. I mix some vanilla in with the eggs and cinnamon in with the flour. This gives it a bit of a sweeter taste, but doesn't add sugar. I always serve them warm with honey and butter on the side. Oh, and I make them in a muffin pan that I have greased heavily with shortening. They don't puff up as much, but are just as good! They are not traditionally a dessert, but I serve them all the time as a light dessert.

This easy baked apple recipe makes a great dessert or snack. Use whatever fruit-flavored diet soda catches your fancy.

Have made these for years. I do what the first Reviewer says and use diet ginger ale and add cinnamon. I also add some raisins, they soak up the reduced juice and add more flavor.

Eclair Cake

Submitted by: Cathy Gordon
This is a very quick and simple no bake dessert cake. It uses graham crackers and a pudding mixture. It tastes just like an eclair, but there is enough for a crowd!! It is a great recipe for children who are learning to cook, there is no baking involved or any power kitchen tools. Just a bowl and a spoon!

I say something like this or a banana pudding, the one with sweetened condensed milk and vanilla pudding. They can stretch pretty far and are easy to make.

I don't know about desserts for diabetics, but I did lighten this up for my diet. Here's my review: I followed the instructions in the review by SDOUGLAS to make this dessert lower in calories and fat: sugar-free angel food cake, fat-free cream cheese, Splenda instead of sugar, fat-free Cool Whip, and Marzetti's sugar-free strawberry glaze. I layered it in a trifle bowl and topped with another 8-oz. tub of fat-free Cool Whip. 14-18 servings = 2 weight watchers points. I took it to a dinner and everybody loved it!

Thank you! This looks perfect for the sugar free! And I was already eyeballing that eclair cake. Great minds!

BTW - I don't think the directions tell you, but for the eclair cake's last step, I always put the can of chocolate frosting in the microwave for just a few seconds and pour it over the crackers. If you don't, it's impossible to spread the frosting without messing up the layering of the crackers.

Make sure you use sugar free Cool whip if you want it truly sugar free.

Fruit Pizza I

Submitted by: Anne
Delicious fruit pizza is an attractive dessert perfect for a cookout or children's birthday party. The crust is made from cookie dough pressed into a pizza pan. After the crust is baked and cooled, it's frosted with sweetened cream cheese and decorated with slices of fresh fruit. Chill well before serving.

I love this, quick and easy...make with any fruit you like: strawberries, blueberries,kiwis...very pretty easily portable, and can be cut in any size for larger or smaller gatherings. make 2-3 and cut into 15-20 pieces each. Everybody loves them.
