hooterville is asking: (2 answers)
I belong to a legion and we have 2 industrial ovens and 2 regular gas ovens. I think I have room to cook about 90 stuffed Cornish hens for a fun raiser but don't know the baking time for that many hens at once. Hoping someone out there can help me. thank you Hooterville

The timing shouldn't be too different so long as you aren't starting with frozen birds. Just keep an eye on them because all the ovens may be calibrated differently and one may cook hotter or faster than another.

we want to eat at 6 and don't want them under cooked or sitting around to long getting cold or drying out. so need how long it may take to cook

I would bake in a 375 degree oven for 1 1/2 to 2 hours. An instant-read thermometer inserted near the bone of the hens and in the center of the stuffing should read 165 degrees.

You know how different places in the oven bake differently? I'm wondering with the ovens full of the hens if perhaps halfway through the cooking time it might be good to rearrange them. Put the ones in the middle on the edges, and vice versa. Just a thought. I know you're supposed to do that with other recipes when oven is full.

Then, when you do that moving at halftime, check and see how they're doing and adjust time and temp accordingly. Remember too they will keep cooking after you pull them out.
