Need your thoughts this morning. My daughter is getting married in the middle of July. She wants to have a very informal lunch and I don't have a clue on what to make. BBQ, or meat and cheese tray or just what. Today as cold as it is all I can think about is soup!!! We are have about 60 people.

If there are going to be dress clothes and small children, might want something not too messy. Maybe a picnic style lunch. Fried or baked chicken (all legs or mixed), potato salad, pasta salad, mac N cheese(for the kiddies), baked beans, fresh veggies and dip. Lemonade and iced tea.

I agree with Sassy- may be hot and people are dressed up. Fried chicken in easy to pick-up size pieces is a good idea. I like make ahead trays of cold cuts, cheeses and condiments with a variety of small dinner rolls. We have been serving individual veggie cups (use short clear plastic cups) with a few sliced veggies and dip on the bottom. Also try cups with taco dip on the bottom and nacho chips stuck on top. Very classy looking and neat. Saw these on Pinterest. A pretty punchbowl is nice (spiked or not)

That is a great idea. It is a country wedding so I think that would fit right in. Thanks!!

First thing I thought of was cold fried chicken, too. Sounds like a fun time!

Our kids had an outdoor reception last Sept. We did several salads like Peanut noodle salad, potato, and pesto salads. Then lots of rolls and grilled chicken and salmon, Yummmm

I wish we could do an outdoor reception. Just too hot that time of year. Salads are great in the summer. Who wants something to heavy to where you don't want to get out on the dance floor

Golden puffed pastries are filled with a feta cheese mixture. These can be made ahead, and popped into the oven after your guests arrive.

Tomato and Mozzarella Bites

A great way to serve tomato mozzarella salad. Great presentation; always a hit! You can find the bite-sized mozzarella ('Bocconcini') at most supermarkets. If they are on the larger side, cut them in half.

Tortillas spread with cream cheese and filled with thinly sliced ham, cheese, and other yummy things are sliced into rounds to make great little finger sandwiches for any occasion. Best of all, you can roll them beforehand and slice when you're ready to serve.

Watermelon Fire and Ice Salsa

Juicy watermelon replaces tomatoes in this salsa that's simultaneously cool and spicy hot -- perfect for a summer barbeque. Serve it with tortilla chips, or use it as a topping for grilled chicken or fish.

This makes a whopping salad, but once you start eating it, you'll wish you'd made more. Lots of crunchy and delicious ingredients like water chestnuts, peas, chopped tomato, and crumbled bacon are topped with a homemade dressing.

This would be an easy salad to make ahead of time if you have the cooler space to keep it in. I use less of the dressing mixture though because I think there is too much. It would be good with chicken.
