Why are my cookies bitter? I made the delicious-looking cookies from this website: . Before cooking, they tasted absolutely delicious, like lemon cream cheese frosting. (I only tried a little taste). After cooking, the flavor was still a perfect balance of tangy and sweet, but the after taste was just bitter, with no lemon flavor at all -- and lasted much longer than the cookie. Also, the sugar crystalized and stuck to my teeth as I chewed on the cookies, so I really think there is too much sugar in this recipe. Finally, they did not spread out, as I expected from the picture. Rather, they swelled up, and then some fell back down and looked sort-of like the picture. The others did not fall, and were hollow in the middle. While it could be the lemon that caused the bitterness, I don't think so because I think that would be more sour than bitter, and I carefully avoided the white part of the lemon. Could it be having so very much sugar that did it? Or was it something to do with the lemon after all, like a chemical they may have sprayed on the peel? Since the sweet/lemon ratio already tastes perfect, would it come out too sour if I just reduce the sugar? Should I perhaps add more flour instead? What do you suggest?

I just looked at the recipe. Looks good. I'm wondering if there might be something wrong with your baking powder? I know there's just a small amount.

Hopefully you scrubbed and washed the lemons first before zesting? Make sure everything is at room temp, especially eggs and butter. Cream butter and sugar really well. Check your soda and powder like Peggy said. Bake on parchment and if using a dark pan lower temp by 25 degrees. Invest a few $ in an oven thermometer to check your oven, sounds like it is too hot.

Aha! My baking powder is expired! I just checked a website on how to confirm that, and the fizzing stopped almost immediately. I didn't realize that could lead to bitterness, only flatness (which these were not). Thanks for pointing that out! I will get more and try the recipe again, using Sassy~NOT's suggestions. Thank you so much for your help!
