My husband HATES celery and green pepper. I am planning on making the bacon meatloaf that was featured on Rachael Ray today. It calls for a 1/2 cup of celery and a 1/2 cup of carrots. I don't want to double the carrots and have it taste like carrot loaf. And I can't sub green pepper. So what else should I use? Parsnip? Turnip? I'll post the recipe link inside. Thanks!

Love Rachael's recipes, I just saved a Chinese noodle dish she made last week on the show. I think the closest taste/texture match to celery would be some diced water chestnut, think it would be great in there. Or how about some fine diced or even shredded zucchini? I think parsnip and turnip would be too close in taste to the carrot, but I would go with parsnip between the two. Sounds yum-o!

Hi, re celery. sub finely chopped red bell pepper. works well normally. re green pepper, use dried/flaked chilli. should work and be invisible. Hope helps. cheers.

might sound odd but I have had meatloaf surprise which had hard boiled eggs wrapped up loaf style in the ground beef, when you slice the meatloaf you get slices of hard boiled egg which taste great and look so pretty too. A nice switch.

Do you have a food processor? If you processed them very finely in it, I doubt that he'd even know that they are there. I saw a video on this site for a meatloaf recipe that did that...might have been a Chef John recipe.

I don't like green pepper yet I love red pepper... maybe sub for red pepper and he won't notice :)
