the family isn't a fan of green chile stew either & that's all I can think of to make w/it.

It's funny you should post these 2 recipes because I also have a pork roast in the freezer that I'm thinking about making Pork Chalupa meat with & I was wondering what else I could do w/it besides just wrapping it in a tortilla. GREAT ideas!!

I have been making this stew for more than 20 years. It's a dish I use to celebrate the harvest season. Experiment with different root vegetables, and use the dumplings in other hearty stews or soups. They are so yummy!

I'd make this, mix the spices, toss some bacon pieces and the cubes together with the spices and toss the whole thing in a cast iron skillet. You probably could do this with the oven step too.

Sorry, gals. I was searching thru my RB & came across this one & I think I may give it a try since I have all of the ingredients for it! Not too sure my boys are going to go for it, but we shall see. There's always ramen noodles or cereal, right?

Back in the day when chicken was expensive and veal and pork were cheap, 'city chicken' was a skewer of pork or pork and veal cubes, coated, deep fried and then baked to resemble fried chicken. Pork is still relatively inexpensive, and this is still an old-fashioned comfort food from days gone by.

An authentic Mexican stew made with red chili pods, pork roast, pork rinds, and pigs' feet (use pork shanks instead of pigs' feet if you are squeamish). You can also substitute hominy for the posole if it is not available in your grocery store.

One of our favorite soups from New Mexico; I have not tried this recipe, but it looks the same as what I've had.

I would just use your pork chunks, and not use the feet and/or rind.
