I am looking for a easy side dish to go with the baked tilapia. Please don't suggest rice. We are soooo tired of rice and potatoes. So, I welcome anything creative and tasty. Look forward to your suggestions.

Orzo, the ricelike pasta, is lightly flavored with lemon, then stirred into cooked sweet onion, zucchini, and yellow squash for a colorful side dish that's quick and light.

An easy Italian-style preparation of kale. The simple additions of balsamic vinegar and minced garlic show off kale's natural sweetness and rich texture.

Roasted Brussels Sprouts

Submitted by: JAQATAC
Brussels sprouts - the perfect holiday side dish - are simply seasoned with salt, pepper, and olive oil, then slow-roasted in a very hot oven until darkest brown. They are the perfect combination of sweet and salty, and make for perfect snack leftovers straight from the fridge the next day!

I often want to try this with the tilpia parmsean recipe from here. I usually just serve plain couscous .

I have never tried couscous. I have, however, had quinoa. Is it similar?

I know this sounds silly. But I don't buy asparagus unless it is in season where I am. Like I said, sounds silly.

I love quinoa and I wanted to make something that was flavorful and filling. The vegetables can be changed to your liking!
