Jersey Strong here!!! :-) .... The last day of our local farmers market and I picked up a basket of Jersey tomatoes!! Thanks to Maui Girl I p,an to make the inside tomorrow!!! QUESTION - it calls for peeled tomatoes - I have never done this before! Is this blanching? How does one do correctly? Any tips? Recipe inside! Thanks

Jersey Fresh Tomato Soup

Using 2% milk gives this rustic soup just a little bit of creaminess without all of the fat. You can easily make it vegetarian by substituting the chicken broth with vegetable broth.

Boil a pot of water then with a knife make a cross in the bottom of your tomatoes. Drop the tomatoes into the boiling water for a few seconds. (You will see the skin of the potatoes start to loosen) Remove the tomatoes to a bowl of cold water then remove the skin. Very easy to do and just takes a few minutes.

So I am reading over the reviews!! Some say they skipped this step and just blended afterwards - thoughts?

Heather, are you referring to my review? If so it's because I had all kinds of tomatoes, big, small (cherry and grape) and couldn't see trying to peel them. I got rid of the skins and seeds after prueeing by forcing them through a fine sieve. Great recipe, BTW.

To peel a tomato you blanch it in boiling water then peel the skin off. this can be done with the fingers after blanching.
