Corn flour, or masa harina, is available at many larger grocers. Here it blends with corn meal, sugar, butter and cream in this luscious pudding-cake.

Hi, try these. cheers. Salsa Roja 3 ripe Tomatoes - deseeded and chopped 1 Onion - chopped 3 Serrano Chillies - deseeded and chopped (or to taste for heat by retaining some seeds) Serrano Chillies are medium to hot in flavour 1 to 2tsps Salt - or to taste 3tsps Lime Juice - or to taste 2 tbsp fresh Coriander - roughly chopped Combine all the ingredients together well in a bowl, cover with clingfilm and refrigerate for a minimum of 2 to 3 hours to allow all the flavours to mature.

Corn on the Cob with Lime and Cayenne Butter ½ corn on the cob 85g/3oz butter ½ tsp cayenne pepper ½ lime, zest only 1 tbsp coriander, finely chopped Preparation method Place the corn on the cob into a saucepan of boiling water and boil for 8-10 minutes or until the sweetcorn is cooked and tender. Remove the corn on the cob from pan and keep warm. In another saucepan, heat the butter, cayenne pepper, lemon zest and coriander until melted together. To serve, immediately pour the sauce over the hot corn on the cob

the salad looks yummy! I am taking this dish to a bar that hires me to do food for them on Monday nights for the football game. I think the corn would be great! I might need to find someone with a electric roaster or something to keep them warm.

This has chile peppers in it, and while not authentic Mexican, I think it would complement fajitas well.

I keep meaning to try this recipe. It looks similar to the corn on the cob you can get from street vendors in Mexico.
