I needed oatmeal for a recipe the other day, and because I was short on time [what's new?! lol!] and at Costco, I bought a big Costco box of oatmeal . . . Going to have to do a lot of oatmeal baking! Luckily, I ran across this recipe recently! I just made it for breakfast [with some tweaking (=] VERY good!

So, when I went to the grocery store the other day, they did not have leeks or shallots - or I am blind, or in need of a map! - so I used half of a sweet onion and three green onions. I also added a goodly dollop of minced garlic - and I just tossed in a couple of handfuls of spinach. I have rolled oats, so I read the directions on it for the amount of liquid to use for a serving . . .

Make your own granola! We buy the boxes from Costco and even though DH eats oatmeal most days of the week, it takes a while to go through them. I've just started making my own granola though and it's going faster.

If you have an over abundance of oatmeal,it does keep well in the freezer.I buy the big bags,keep some out,rest in the freezer.

This recipe only uses 1 cup of oats but it will help use them up. I love oatmeal cake!

I got this one yesterday and I've made it twice. Maybe you'd like to try...Ingredients 1 cup old fashioned oats 3/4 cup vanilla soy milk (or your favorite kind of dairy/nut milk) 1 Tbsp ground flax 1 Tbsp chopped walnuts 1 Tbsp cranberries 1/4 tsp cinnamon sweetener of choice ~ optional Directions Mix all ingredients together, in a bowl with a lid & let the oats sit in the fridge overnight. In the morning, give it a good stir & enjoy as is, or add some sweetener. For a little different spin, consider these mix & match ideas. Get creative, to your heart's content... Overnight Refrigerator Oatmeal with Pumpkin & Chia Seeds use your favorite fruit juice in place of the dairy/nut milk (V8-Fusion is a fruit/veggie blend that tastes just like fruit juice, so you can sneak a bit of veggies in your breakfast) 2 Tbsp canned pumpkin puree 1 Tbsp Chia seeds 2 Tbsp unsweetened applesauce 1 Tbsp dried fruit, like ~ raisins, chopped apricots, chopped dates a little honey, maple syrup, molasses, etc.
