i am making chicken and dumplings and the recipe asks for condensed milk. what can i substitute for it as i don't have any (this is for the dumplings)

it calls for evaporated milk not condensed milk. Condensed milk is sweetened. You can sub evaporated milk. Let me see if I can find the ratio exchange.

I would use half and half or the richest milk you have.

No need to pay a premium for those little cans of evaporated milk. You can make your own in two minutes or less. Prep Time: 2 minutes Total Time: 2 minutesIngredients: •2/3 cup non-fat dry milk •3/4 cup water Preparation: Mix the water and dry milk powder together. Then, use in place of the evaporated milk in any recipe. Yield: 1 cup (8 ounces) Did You Know? Evaporated milk is simply fresh milk that has had about 60% of its water content removed.

Substitute for evaporated milk For 1 cup of evaporated milk, substitute 1 cup half-and-half, 1 cup heavy cream OR 1 cup whole milk Equivalents 5 oz. can = 2/3 cup

all i have is skim milk and a broken foot so can't really go get anything else right now....anyone have a different recipe for the dumplings?

looking at the recipe again the evaporated milk is to thicken at the end....any suggestions?

Sorry if I misread the recipe but it looks to me like the milk is for the soup not the dumplings. I'd use what you have and make a flour/milk slurry to thicken if needed.

The milk is just stirred into the stock at the end. Use your milk and feel virtuous because you made it "lite". If you want it richer, add a a couple of tablespoons of butter a la Julia Child.
