I have accepted a small job providing appetizer to a local bar every other Monday night. I was told they don't want a meal, just appetizers. I need some easy inexpensive ideas. The food will likely sit out throughout the football game, but I do have crockpots and can keep food chilled on plates (no wings, a wing guy is doing the alternating mondays). 20 - 30 people, mostly men. This is an easy cream cheese spread to make, and it tastes just like the jalapeno poppers you wish you could make yourself! The hardest part of this recipe is not eating it all by yourself!

I love this. I like it baked with a Ritz cracker/butter crumb topping (baking makes the topping crunchy) but it would work in a crock pot.

we did these with club crackers. They were very odd little appetizers, but well received and requested again.

I do the same thing once a month for a local bar here. I have a number of appetizer (finger food) recipes that have been big hits. I just found this site 2 days ago, and haven't had time yet to put some of my recipes out there. The fav or the guys at this bar are my bacon crab bites. I use the imitation crab sticks (which are snow crab and white fish). I cut them in 1/2 or 1/3rds. I take bacon strips and cut them in 1/2 (or 1/3rds if the bacon is long enough). I put the bacon on a sheet pan, in a 400 oven until almost done. Drain it on paper towels and immediately wrap the warm bacon around a piece of krab stick. Secure with a toothpick. I put all of them on a sheet pan and brush them liberally with a prepared sweet & sour sauce (Kikkoman). Then put them back in the oven until the bacon is fully cooked and the krab is warmed through (about 10mins). They are even good at room temp and can sit out for 2-3 hours. They can also be re-heated in a microwave. I have many more and will try to post some soon. My most popular one is my cucumber sandwiches. I usually make about 60 when I take those, but I bet if I made 100 I wouldn't bring any home.

Black beans absorb other flavors superbly, so try to leave this for at least 20 minutes before serving to allow the different flavors to blend together.

It's easy to make lots and lots of these cream-cheese-based rounds: Simply use extra-large tortillas and roll them up with the smooth and crunchy filling.
